Vancouver, BC | All is merry in Maitre Chocolatier and Patissier Chef Thierry Busset’s bustling workshop as preparations for another magical holiday season begin. His exquisite selections to adorn your table, for hostess gifting, or filling loved ones’ stockings are ever-inspired by seasonal flavours and guest favourites.
Each year, the unmistakable stars of Chef Thierry’s kitchen are his breathtaking Buches de Noel that are available in five feature flavours:
Chestnut: Hazelnut sponge, chestnut bavaroise, candied chestnuts, and chocolate ganache.
Mandarin Coconut: Coconut sable with a hint of nutmeg, mandarin cremeux, and mandarin mousse.
Pistachio Nut: Pistachio jaconde, pistachio buttercream and ganache, pistachio bavaroise, and candied mixed nuts.
Tiramisu: Chocolate cookie base, espresso sponge, and mascarpone mousse.
Whiskey Chocolate Truffle: Chocolate cookie base, caramel, whiskey chocolate ganache, and chocolate mousse.
Yule logs are available in small, medium, and large formats with prices ranging from $35.95 – $57.95. Pre-orders will be accepted beginning December 1st with pick up on either December 23rd from 11am – 11pm or 24th from 9am – 4 pm. “My favourite part of the holiday season is seeing a guest’s delight at the sight of our seasonal offerings or the Buche de Noel that they’ve thoughtfully selected to share with family and friends,” says Chef Thierry. “It’s truly a special time of year.”
The collection wouldn’t be complete without a selection of irresistible holiday macarons in chestnut, cranberry, gingerbread, and stollen. Make like a Parisian and enjoy a macaron or four with a handcrafted liquid chocolate or latte on the Fleurs de Villes Noel designed patio, beginning December 6th.
Thierry Cafe is located at 1059 Alberni Street and is open from 7 am – 11:30 pm on weekdays and 8 am – 11:30 pm on weekends.
Thierry Cafe will be closed on December 25th and 26th with modified hours on December 24th (7 am – 5 pm), December 31st (7 am – 10 pm), and January 1st (10 am – 11:30 pm).
