Royal Dinette Set For Third Edition Of ‘Ugly Duckling’ Dinner Series On Feb. 10th

Vancouver, BC | The concept of “trash cooking” cuisine comes into clear focus once again on Wednesday, Feb. 10 at Royal Dinette when Chef/Owner David Gunawan and Head Chef Jack Chen host the third edition of their ongoing “Ugly Duckling” Dinner Series.

The farm-to-table-focused restaurant launched the thought-provoking series in October with the intention of educating guests about food-waste awareness and sustainability issues through dishes that feature the “ugly ducklings” of the culinary world.

In keeping with that theme, the latest six-course Ugly Duckling menu will transform commonly discarded cast-offs and scraps such as juice pulp, cores, roots and stems, offal, coffee grounds and pork skin into a truly unforgettable meal with an ecological message.

“The purpose of these dinners is to demonstrate just how easily these often-overlooked ‘ugly ducklings’ can be turned into swans,” says Head Chef Chen. “Our goal is to bring attention to unnecessary food waste and demonstrate ways in which these ingredients can be incorporated into an incredible culinary experience.”

The Ugly Duckling series will continue into the spring with future dinners planned for Tuesday, Mar. 22 and Tuesday, Apr. 26, 2016. Menus and exciting Ugly Duckling Dinner guest chef collaborations will be announced soon.

TICKETS | Tickets for Royal Dinette’s third Ugly Duckling Dinner on Wednesday, Feb. 10 are available via Eventbrite and include a six-course menu with beverage pairings for $79 per person plus tax and gratuity.

As Royal Dinette prides itself on placing a premium on the availability and seasonality of all ingredients, the Ugly Duckling Dinner Menu is subject to slight changes. Substitutions are politely declined.
