Cibo Announces New Chef, New Menus, Special Thanksgiving Feast

Vancouver, BC | Newly minted Cibo Trattoria Executive Chef Curtis Luk has affixed his culinary stamp on the cucina at the downtown destination and unveiled an array of new fall menu items as well as a special Italian-inspired Thanksgiving menu exclusively available October 6 through 8.

A pedigreed chef who helped open Fable in 2012 before more recently earning accolades as the Chef/Owner of Kitsilano’s beloved Mission restaurant, Luk brings a contemporary approach to Cibo and its sister spot UVA Wine & Cocktail Bar while also staying true to the signature rustic-yet-elegant style of regional Italian fare for which the restaurant has become known.

Some highlights of Luk’s new daytime and dinner menus at Cibo Trattoria include:

DAYTIME MENU

Frittata (caramelized onion, zucchini, ricotta salata, seasonal salad)
Fregola Sarda (peperonata, sunny-side-up eggs, cauliflower, arugula, ricotta)
Prosciutto e Melone (spice-cured melon, prosciutto, prosecco gelée)
Brodo (salumi and parmigiano broth, ricotta gnocchi)
Tagliatelle (duck ragu, mushrooms, parmigiano reggiano)

DINNER MENU

Branzino (sea bass, tomato saffron stew, pistachio agrodolce)
Anatra (duck breast in dolce forte, pine nut, caramelized radish)
Bistecca (30-day dry aged ribeye, seasonal salad, piave cheese)
Orecchiette (tomato, a garden of herbs, bottarga)
Acquerello Risotto (squash, mascarpone, endive)


Luk has also bolstered the menu next door at UVA Wine & Cocktail Bar by adding a number of bites and small plates such as bruschetta (garlic, roasted eggplant, green chickpeas), arancini (porcini mushroom, mushroom jam) and spiedini (skewers of lamb sirloin, alla Romana, pork, or sweetbreads with preserved lemon and fig), as well as larger dishes available daily between 4 and 10 p.m.

“I’m excited to join the team at Cibo and UVA, which have long been favourite spots of mine,” says Luk. “I look forward to offering our guests a more contemporary take on regional Italian cuisine, but with an eye on tradition and authenticity.”

THANKSGIVING WEEKEND SERVICES | On Saturday, October 6, Sunday, October 7 and Monday, October 8, guests are invited to gather friends and family at Cibo to enjoy a four-course Thanksgiving feast of zuppa di cavolo nero (Tuscan kale soup, cannellini bean, chicken-clove consommé), potato gnocchi (sage, brown butter, bread crumbs), tacchnino alla Milanese (turkey cutlet, cranberries, arugula salad) and crostata di zucca (pumpkin pie, sour cream Chantilly). The prix-fixe dinner is offered for $59 per person plus tax and gratuity, with optional wine pairings and regular à-la-carte options also available.
