New ‘Hawksworth’ Head Chef Chris Stewart Serves Up Winter Refresh On Menus

Vancouver, BC | Hawksworth Restaurant’s new Head Chef Chris Stewart brings a fresh take to the winter menu with a complete refresh of the Hawksworth tasting menu and new seasonal additions to the a la carte menu.

“Each of these new menu additions has been crafted with respect to the changing season,” says Chef Stewart. “By focusing on ingredients that are at their prime, we will ensure that Hawksworth guests receive the very best of the best.”

Chef Stewart’s vision upholds the excellence of the restaurant’s reputation by including international influences and the best of local produce to showcase the finest flavours BC has to offer. Coastal seafood will be a staple on the menu and feature in dishes such as Pan roasted scallops with matsutake, pumpkin, caramelized yogurt and cauliflower ($25). Other ingredients such as curried squash, orchard fruits, salsify and local mushrooms will also speak to the rich flora and fauna of the province.

The new tasting menu includes seasonal specialities such as crab with chili, lemon and pear while richer meat dishes include squab with huckleberry, charred onion and walnut, and lamb with salsify, sea buckthorn and jerky. Finish off the tasting menu with a dessert of pear with hazelnut, rye and puffed grains ($118 per guest/$186 with pairing).

New a la carte menu items include fresh BC sturgeon ($44), which combines flavours of lemongrass, coconut and cilantro for a unique way to warmly welcome the winter months ahead. Hawksworth is proud to be one of the few restaurants in Vancouver to serve shaved Alba white truffles, an increasingly hard to harvest truffle imported from Italy’s Barolo region, as an exquisite add-on to complement any meal. Many of Hawksworth’s well-loved classics will still be offered, such as the brown butter crusted lamb loin with smoked cauliflower, potato and a succulent lamb jus ($47).

THE YORK ROOM | Overlooking the Vancouver Art Gallery plaza, the York Room is one the city’s most historic and exceptional event spaces. Taking its design inspiration from the 1920s, the dramatic chandeliers and ornate heritage features create an elegant private dining room perfect for intimate gatherings or an important executive dinner, lunch or breakfast meeting. The York Room can accommodate a booking capacity of 63 for a seated dinner, or 110 for a standing reception.

BEL PRIVATE DINING | David Hawksworth’s Bel Café, adjacent to Hawksworth Restaurant, offers an intimate and relaxed private dining space as an alternative to the historic York Room. Bel Private Dining can accommodate an intimate sit-down dinner for up to 20 guests or a stand-up reception for 40. Floor-to-ceiling windows allow for a stunning view of the Vancouver Art Gallery and rich dark wood paneling offers luxurious surroundings, complemented by custom designed wallpaper in a palette of soft colours that create a chic European feel.
