Two Pidgins Prepare To Deliciously Collide For Collaborative Feast In London, UK

Vancouver, BC | On November 10th, Gastown’s Pidgin will be in London, UK, for a special collaboration dinner with its British namesake. The two culinary paths will cross for a single night, as the cooks share the kitchen for Pidgin vs. Pidgin. Vancouver’s Pidgin will showcase West Coast Canadian plates, sharing the table with Pidgin London’s regional modern British cuisine. The London-based Pidgin, which is unaffiliated with the Vancouver restaurant of the same name, opened its doors in July of this year to critical acclaim. Each week, head Chef Elizabeth Allen crafts a set four-course menu based on seasonal ingredients. Chef Elizabeth’s skilled technique and eye for beautiful plating results in creative dishes that are delicious, visually stunning, and reflect a modern British sensibility.

With similar climates in their hometowns, each Pidgin has access to ingredients that might be familiar to the other. They both embrace local sourcing, making the most of vegetables that are at the peak of freshness and flavour. Chef Shin Suzuki and Chef Elizabeth also share a love of Asian cuisines, but the evening will focus where their influences diverge. Pidgin vs. Pidgin will see the Vancouver cooks serving dishes with their signature Japanese twist—like mushrooms with snap peas, yuzu brown butter, ramen egg and oyster shot—while their Brit counterparts will stay true to their roots with new takes on tradition, like pig head with morcilla and smoked apple, and dexter beef with bone marrow béarnaise, salsify, and spinach.

About Pidgin London | Pidgin is a casual fine dining restaurant that each week serves a new four-course set menu of modern British food and dangerously moreish (and potent) cocktails. The dining room balances understated chic with simple, bold design statements. Pidgin invites you to bring a date, the in-laws, or friends, and get stuck in—and then come back the following week. Pidgin is located at 52 Wilton Way, London and is open for dinner Tuesday–Sunday from 6pm-10pm, and Lunch on Saturday and Sunday from 12pm-2pm.

Rarely predictable, never overwrought and fussy, always thoughtful, cared for, and prepared with the utmost integrity.

At PiDGiN, there is no need for distinctions between casual and fine dining. A restaurant can be both beautiful and comfortable; cuisine can be at once delicate and approachable. As dining perspectives have changed, so too has the line between east and west. Pidgin’s chefs and owners draw inspiration from their travels and work experience on different continents which is reflected in the restaurant’s design, drinks list and cuisine.

The bar pays its respects to classic cocktails with fresh interpretations that make good use of our region’s fine local bounty. For the more adventurous the taps pour local sake. By the glass and bottle is a tight wine list, bolstered by a well-curated reserve list for those seeking something truly special. Perhaps most exciting is the harmony between kitchen and bar, a collaboration that ensures equal attention to detail and creativity with the ladies and gentlemen behind the wood and stoves.

Craig Stanghetta of Ste. Marie based PiDGiN’s design around the food. Much like the namesake, the design borrows liberally from different schools of thought. Curated ephemera, inverted subway tile and contemporary lighting stand against clean Japanese joinery, simple panel moulding and an intentionally sparse and functional layout. The mandate was to be disparate and somehow achieve balance, much like each dish that leaves the kitchen.
