Hapa Izakaya Chef Releases Menu For Edible Canada’s June 6th Japanese Feast

Vancouver, BC | On June 6, 2016, acclaimed Chef Tomoki Yamasaki will take over Edible Canada’s Granville Island demo kitchen to present a playful Japanese-Canadian tasting menu to 28 lucky guests as the last spring dinner of the Canadian Table Dinner Series. The intimate long table setting allows guests to meet their neighbours and to interact with both Chef Yamasaki and host Eric Pateman, Edible Canada’s founder. Guests are invited to put their phone aside and mingle, listen to colourful cultural stories, relax, and indulge, all while sipping on welcome cocktails and beautifully paired wine.

Each guest at the event will receive a decadent welcome gift from Vancouver’s own Coconama Chocolate and the wine pairings that are sure to enhance each dish will be brought to you by on of Canada’s widely celebrated wineries, Okanagan Crush Pad. The entire evening is a refreshing nod to local producers, seasonal ingredients, and the influence of Japanese flavours on Canadian cuisine.

Vancouver is globally acclaimed as the best place to experience Japanese cuisine outside of Japan. Chef Yamasaki has wholeheartedly embraced this side of the Pacific Rim, creating the popular menu at Vancouver hotspot Hapa Izakaya. This dinner will be the very best flavours and themes of Hapa Izakaya, presented as a fine dining tasting menu. This is more than a dinner — it is a celebration of BC’s regional bounty highlighted by the brightness and umami of Japanese cuisine.

Tomoki Yamasaki was born and raised in Burnaby, BC and describes his cooking style as “progressive Japanese”. When pressed about his influences, Tomoki gives a nod to his heritage. “My father, who was also a chef, had a huge influence on the way I ate food. Growing up he always fed our family great food. If there was ever something I didn’t like he would make us try it with an open mind, and because of this I have a greater appreciation for innovative cuisine.”

Now the Executive Chef for Hapa Izakaya, Tomoki has learned the importance of freshness when it comes to ingredients. Teeming with OceanWise products, his fresh, innovative and creative recipes are beautifully featured on Hapa’s ever-evolving menus. Hapa Izakaya has been voted “Top Five Izakayas in North America” by Bon Appétit Magazine, topping “Industry” and “Readers Choice”, Georgia Straight awards for Best Japanese in 2012 and Best Izakaya in 2014-2016, and “Best Casual Chain” by Vancouver Magazine from 2011-2015.

The richness of tuna belly will be accentuated by a smokey finish, and the delicacy of sablefish is elevated by a balanced and decadent yuzu miso marinade. To top it off, Edible Canada has partnered with Okanagan Crush Pad to pair each dish with an equally delicious glass of wine. Beautiful chocolate ganache treats from Coconama Chocolates will be at each seat, with unique flavours inspired by Japanese ingredients. The entire evening, like a perfectly wrapped gift basket, contains every Japanese delight we could think of.

Edible Canada (formerly Edible British Columbia) is a six year-old business headquartered at Granville Island Public Market, in Vancouver, British Columbia. We are Canada’s largest culinary tourism and locavore retail company, dedicated to sourcing the highest quality culinary products from coast to coast for our customers.

About Eric Pateman, President & Founder

Eric-@-Market-DinnerEdible British Columbia was created by Eric Pateman in the spring of 2005. Eric is a Vancouver native with a lifelong passion for food and wine. He has worked in the hospitality industry for over 15 years both as a chef and hotel consultant and has rated restaurants for the Mobil Travel Guide. Eric’s own culinary travels have taken him throughout North America, to the UK and to Africa where he has sought out unique food experiences. Edible British Columbia is the product of Eric’s fervor for great food and wine, his extensive knowledge of the hospitality industry and an enthusiasm for exceeding expectations when it comes to customer service. Eric is a past board member of the BC Culinary Tourism Society and the Vancouver Coast & Mountains Tourism Region. Eric is also a member of the Chef’s Table Society, Big Brothers of Greater Vancouver and supports many local charities including the Vancouver Food Bank and Les Dames D’Escoffier. Eric was named as one of Business in Vancouver’s Top 40 Under 40 Business People in 2007, and to Western Living Magazine’s list of the Top 40 Foodies Under 40 in Western Canada in 2008.
