The GOODS from CinCinand Araxi
Vancouver, BC | Based on the bestselling successes of previous Toptable Group cookbooks, the group will publish two new culinary opuses later this year. Araxi Restaurant & Oyster Bar Executive Chef James Walt’s much-anticipated second cookbook – due to hit stores in August – is Araxi: Roots to Shoots, Farm Fresh Recipes. This will be followed in October by Executive Chef Andrew Richardson’s first book, a celebration of wood-fired Italian cuisine from the celebrated CinCin Ristorante. Both books will be published by Vancouver’s Figure 1 Publishing.
“Our chefs and restaurant teams have an international reputation for excellence in food, wine and hospitality, and they draw visitors from around the world,” states Toptable Group President Michael Doyle. “Now guests can re-create their favorite dishes at home with recipes from two of our celebrated chefs, James Walt and Andrew Richardson.”
“We are so proud to be working with James and Andrew on their cookbooks,” says Chris Labonté, Publisher and President of Figure 1. “They are two of the most gifted and respected chefs in the country, and both books are going to be simply spectacular.”
The two cookbooks take advantage of accessible local products, and the recipes are designed to be stress-free for the home cook.
Previous Toptable Group cookbooks have won much acclaim. The first Araxi cookbook, which won both the Cordon d’Or Gold Ribbon and the Gourmand World Cookbook Award, was singled out by chef Gordon Ramsay, who said, “What a book to have! Inspiring and creative – a must-have ingredient in any kitchen!”
Located in the heart of Whistler Village, Araxi Restaurant & Oyster Bar is internationally recognized for its hospitality. Executive chef and “farm-to-table” pioneer, James Walt, continues to inspire guests, creating compelling cuisine based on local, sustainable ingredients. Walt’s book will feature 80 new recipes, and will be complemented by striking photography.
The CinCin cookbook will feature more than 80 of Chef Richardson’s favourite recipes, including many intended for the grill. Located in the heart of Vancouver’s shopping district on Robson Street, CinCin Ristorante offers Italian-inspired dishes created with local and regional ingredients. The internationally acclaimed Argentinean chef, Francis Mallmann, will provide a foreword to the cookbook.

The Cookbook
Araxi, Seasonal Recipes from the Celebrated Whistler Restaurant
by James Walt $45.00
Gorgeous photography and accessible recipes frame the seasons and chef James Walt’s celebration of our region’s bounty in Araxi: Seasonal Recipes from the Celebrated Whistler Restaurant. A graduate of Stratford, Walt’s sterling career includes the executive chef position at the Canadian Embassy in Rome. The highly anticipated cookbook was just released to high praise by both patrons and Walt’s peers, including chefs Gordon Ramsay and Heston Blumenthal. Walt’s distinct Canadian style – that celebrates both local farms and coastal fisheries – has won praise and ovations at New York City’s James Beard House where he has showcased his talents three times. Now long established as Whistler’s finest dining experience, Araxi also features exceptional dessert recipes from pastry chef Aaron Heath and wine pairings from Samantha Rahn.
