Wiese Brothers To Open 25 Seat “Pizza Fabrika” On Robson St. In Early June

The former owners of Davie’s La Brasserie, brothers Michael & Stephen Wiese, have secured the old Rasoee spot at 1680 Robson St. between Cardero and Bidwell. With it, they aim to open a new pizzeria by early June.

Pizza Fabrika (“Pizza Factory”), as it’s called, will be a casual, fully licensed 25 seater. The menu will see 8 to 10 pies baked in a high temperature electric oven (800+ degrees). They’re working with yeast-leavened sourdough, which I hope/trust will achieve thin but not too floppy crusts with good chew (similar to Pizzeria Farina). The sauce will be straight-up traditional, ie. D.O.P. San Marzano tomatoes, while the toppings will be more creative and eclectic (while I haven’t seen the full menu yet, I know that their first seasonal special will see spot prawns with white asparagus). Salads, sides, and dessert jars will round out the offerings, and the bar will showcase high acid wines for pairing and a selection of craft beers.

The look will be bright but industrial with plenty of concrete throughout and very few accents of colour (even the kitchen pass will be fashioned from concrete). The floor, I’m told, will look like an extension of the kitchen. The factory feel of the place will be further amplified by the old school propaganda poster aesthetic of their branding.

Pizza Fabrika will be open seven nights a week from 5pm – 12am for dine in and takeout.
