Vancouver, BC | Reopening after its seasonal closure on Thursday, January 22, Botanist at Fairmont Pacific Rim presents the Botanist Discovery Menu – a limited-time, five-course dinner menu thoughtfully curated to showcase the best of the winter’s harvest. Created by executive chef Hector Laguna, the menu is available now through February 6, 2026, with optional wine pairings offered to compliment each course.
“With the start of the new season and new year, with this menu, we wanted to present guests with a menu featuring winter at its peak,” Laguna. “We are working closely with what the season gives us and allowing those ingredients to shine on the plate.”
The Botanist Discovery Menu, $100++ per person, highlights seasonal produce and carefully sourced proteins, brought together through layered flavours and its ingredient-first philosophy.
Wine pairings are available for $89 per person or $179 per person for premium wine pairings.
“This menu is a great way to experience Botanist, especially for guests who haven’t visited in a while or who are discovering the restaurant for the first time,” adds Laguna.
In addition to the Botanist Discovery Menu, guests can also enjoy, The City Set ($49++ per person) for lunch – a two-course offering with a choice of starter and main or main and dessert, thoughtfully designed to suit the pace of the city.
