About Touski
The new project from Lina Caschetto (chef-owner of Say Hey Cafe & Deli) with co-chef Neil Hillbrandt, Touski, sits next door to Say Hey at 154 E Pender Street. “Touski” is a French contraction of ‘tout ce qui reste’, which loosely translates to “everything that’s left or everything that there is.” Here, it points to cooking from what’s on hand, which means a menu that shifts with what comes through the door, what’s in the fridge, and what feels right that day.
With menus drawing from French and British classics (with nods to the neighbourhood), during the day the café side runs with espresso from Modus Coffee, alongside an in-house pastry program; then the lights go down, the tables are set, and the pace changes. By night, the space transforms into a share-plate bistro, with a rotating menu built around French and British classics, reimagined with playful, generous touches and hyper-local ingredients.
A playful, perceptive approach to cooking that celebrates every detail. Transparency is at the heart of Touski — from coffee beans to wine to produce, the team emphasizes close relationships with local suppliers, those relationships are at the forefront of everything we do.
