With over 20 years of experience, Chef Hilary Nguy stands out in a city full of sushi. Known for his meticulous craftsmanship and dedication to quality, Chef Hil creates sushi that is as visually stunning as it is delicious. His journey began in 2003 at Kitsilano’s beloved Temaki Sushi, where he honed his skills and developed a deep passion for Japanese cuisine. In 2022, he opened Sushi Hil to share his expertise and vision, offering guests a more intimate and memorable dining experience that showcases his years of dedication and artistry.
