Botanist Bar Launches Experiential Cocktail Series – Edition No.3: Exploration of Microclimates

Vancouver, BC | Botanist Bar at Fairmont Pacific Rim has unveiled the third edition of its popular Botanist Experiential Cocktail Series. Named ‘Exploration of Microclimates’, the new collection is the latest evolution of the award-winning bar’s immersive Cocktail Lab program, where science, nature, and art converge to create a multi-sensory drinking experience.

Crafted by the Botanist Bar team, led by creative beverage director Grant Sceney and lead bartender Justin Powell, ‘Exploration of Microclimates’ invites guests on a journey through the Pacific Northwest’s diverse landscapes. The series is inspired by shells, apples, and mushrooms, reflecting how coastal waters, inland valleys, and temperate rainforests shape flavour, texture, and aroma – inside and outside of the glass.

“For the third edition of our Botanist Experiential Cocktail Series, we wanted to explore how microclimates shape not just ingredients, but identity,” says Sceney. “Shells, apples, and mushrooms are symbols of place. Each carrying the story of their ecosystem into liquid form through a glass vessel.”

Under the Sea

“Since the inception of Botanist, our Cocktail Lab has allowed our bar team to experiment and create unique cocktails for our guests to exclusively enjoy at the bar and ones they may not find anywhere else,” adds Sceney.
