The Goods from Botanist
Vancouver, BC | Botanist Bar in Fairmont Pacific Rim is excited to announce the first edition of Sips of the East, taking place for one-day-only, on Sunday, October 5, from 5 p.m. to 9 p.m. This East Coast edition follows the recent success of Botanist Bar’s Sips of the West collaboration.
This special evening brings together Grant Sceney of Botanist Bar, Ana Wolkowski of Toronto’s Hoof Cocktail Bar, and Andrew Whibley of Montreal’s Cloakroom Bar as they each create two original cocktails, featuring Pernod Ricard’s Lot No. 40 and J.P. Wiser’s 10 Year Old Canadian Whisky. Guests can sip their way through the featured cocktails, order dishes from Botanist’s late-night menu, and meet the bartenders as they collaborate behind the bar.
“Our Sips series is all about celebrating Canadian bar culture from coast-to-coast and giving visitors a taste of what makes Canada such a dynamic cocktail destination,” says Sceney, Creative Beverage Director of Fairmont Pacific Rim. “Our Sips of the West event was really well received this past summer, and we can’t wait for locals and international guests to now experience the talents of our East Coast friends.”
Hoof Cocktail Bar — currently No. 9 on Canada’s 100 Best Bars list — was originally conceived as a waiting room for the Black Hoof, the now closed, game-changing, meat-centric restaurant opened in 2008, but was always intended to be able to stand on its own. After almost 14 years, it continues to be a vibrant and beautiful place to have a few cocktails, where they always try to find a balance between classic and innovative cocktails (as reflected by a fun and irreverent menu).
Cloakroom Bar — currently No. 31 on North America’s 50 Best Bars list and No. 2 on Canada’s 100 Best Bars list — is a 25-seat cocktail haven nestled in Montreal’s prestigious Golden Square Mile. For the past 10 years, Cloakroom has been known for its distinct no-menu approach and extensive selection of rare and vintage spirits.
Sips of the East will be held on Sunday, October 5, 2025, from 5 p.m. to 9 p.m. at Botanist Bar. For more information, please visit www.botanistrestaurant.com. No reservations required — first come, first served.
