New Chef Derek Bothwell Debuts Fall Dishes At ‘The Bottleneck’ On Granville Street

Vancouver, BC | The times they are a changing! The Bottleneck welcomes Chef Derek Bothwell to the family. Born and raised in Red Deer, Alberta, Derek sharpened his knives working on the family farm. “My mother is a huge inspiration and helped to shape my culinary style,” Derek explains. “Her ability to provide healthy family dinners and encourage the sharing of food and conversation – this is the feeling I strive to re-create daily.”

Derek carried his knowledge of farm-to-table food all the way to Vancouver where he continues to head Earthwise Society, a team that is committed to using seasonal, local, and ethically sourced ingredients while cultivating sustainable communities through environmental education and stewardship. “The other great inspiration is borne of the prairies on my grandparents’ farm; my exposure to wild game, livestock, and farm life helped me develop an appreciation for the circle of life and has become the driving force behind my desire to source sustainable and ethically-sound ingredients.”

Known for his exquisite work with Gastown’s Chill Winston and Guilt & Co., Derek’s approach to cooking is adventurous (to say the least) with roots buried deep in tradition. The Bottleneck’s Fall Feature menu is an embrace of this contrast, including flavourful share-platters with generous portions of seafood, cheese & charcuterie. Comforting veggie dishes like butternut squash stew and the salt roasted beets & honey carrots. And for the main act, Derek took the journey farther with entrées such as duck cassoulet, albacore tuna in pork broth with chanterelle mushrooms, and jambalaya like you’ve never known.

The future of The Bottleneck looks bright – and tastes brilliant.

Located below the historic Commodore Ballroom at 870 Granville Street. You’ll find a beautifully restored modern tavern in downtown Vancouver. The interior is warm, rustic and full of woodsy motifs. Boasting excellent service, great music and miles of booze-filled bottles, the experience is warm and wonderful on every level. The dinner and late-night menu is West Coast seasonal, featuring size-specific plates prepared in-house with fresh, organic, locally grown ingredients. Open Monday & Tuesday from 11:30am – 6pm, Wednesday to Friday 11:30pm – 2pm, and Saturday 6pm – 2am. Events are key to The Bottleneck’s community spirit. We feature music by local and international artists, weekly vinyl nights, Assembly: Sundays with DJ M!G!H! (free w/back alley entrance) and all sorts of other creative programming.
