Botanist Bar Announces Special One-Day Pop-Up with Humboldt Bar and Missy’s This That

Vancouver, BC | On Sunday, August 17, 2025, from 5 p.m. to 9 p.m., Botanist Bar in Fairmont Pacific Rim is hosting its first-ever Sips of the West event – a one-night-only takeover highlighting some of Western Canada’s top bar talent.

For this exclusive evening, guests are invited to explore a menu of signature creations from Grant Sceney of Botanist Bar, Brant Porter of Victoria’s Humboldt Bar, and Thomas Dahlgren of Calgary’s Missy’s This That. Each bartender will craft two original cocktails, showcasing their distinct style. Guests can drop in for a drink or two, enjoy Botanist’s late-night menu, and connect with the bartenders as they collaborate behind the bar.

“Sips of the West is our way of showcasing some of the best bar talent along Canada’s West Coast.” says Grant Sceney, Creative Beverage Director of Fairmont Pacific Rim. “Vancouver is often the first stop for international guests exploring this part of the world, whether they’re heading to Whistler, hopping on a Helijet to Victoria, or connecting to Calgary on the Rocky Mountaineer.”

Humboldt Bar — currently ranked No. 69 on North America’s 50 Best Bars list and No. 22 on Canada’s 100 Best Bars list — is an intimate cocktail bar in the heart of downtown Victoria, inspired by the life and work of Alexander von Humboldt, the 19th-century German naturalist and polymath who shaped our modern understanding of nature and forever changed the way we view the natural world.

Missy’s This That — currently No. 52 on North America’s 50 Best Bars list and No. 8 on Canada’s 100 Best Bars list — is a cocktail bar located above Happy Together Convenience and Food Store. It’s renowned not only for its classic and creative house cocktails, but also for its extensive 350-bottle list, which features a range of wines from both well-known and under-the-radar producers.
