Chambar’s Mainstay Sure Thing Breakfast Of Champions

by Joey Armstrong | I like breakfast. If a menu boasts a breakfast dish or two past 11am, you bet your ass I will order it. This happened recently at a mid-week lunch meeting at Chambar. While you can’t really go wrong at this award-winning restaurant, I decided to not be adventurous and opted for their tried and true Fricasse. Classic comfort. Slow-cooked braised beef served in a skillet with balsamic cipollini onions, applewood smoked cheddar, watercress, potatoes and sunny-side up eggs — I had forgotten just how filling and satisfying this meal is. Of course, that didn’t stop me from snagging several bites of Michelle’s Belgian waffle, which she dipped in raspberry caramel sauce. Also of note and pictured below, the Thon Au Miso: seared albacore tuna with sauteed greens, papadums and a miso/sesame emulsion — so fresh and tasty!
