Botanist in the Fairmont Pacific Rim will start plating from chef Hector Laguna’s new weekend brunch menu this Saturday, October 26th. I previewed the menu last weekend and was impressed by every dish that passed (and paused) in front of me, especially this decadent, amaranth-dusted Brioche French Toast sweetened with dulce de leche and caramelized banana. So delicious!

The new brunch is available every weekend from 11:00am – 2:00pm for $62.00 CAD per person (a la carte also available), and includes a welcome glass of sparkling wine upon arrival, brunch inspired punch cocktail, and an exclusive two-course brunch menu. Executive Chef Hector Laguna’s thoughtfully designed gourmet brunch features locally sourced ingredients and highlights morning-time favourites and savoury specialties.

Guests begin with a selection from the ‘Morning Stretch’ menu that include share-style items such as the Smashed Avocado Toast, Brioche French Toast or the Hand-Cut Beef Tartare. Then for the main event: a selection from the ‘Harvest & Hunt’ that feature Botanist classics like the Wagyu Burger, Fish and Chips with a squid ink tempura, Smoked Bacon Cassoulet, Wild Mushroom Risotto or the signature Botanist Benedict, offered three ways.

A unique cocktail experience, designed in the Botanist Cocktail Lab is served table-side, offering up a selection of rotating brunch-inspired punches made with house-made seasonal tinctures and syrups.
