Victoria Pimm is Elio Volpe’s New General Manager

Vancouver, BC | After five years on Commercial Drive as general manager of Banda Volpi sister-spots Caffè La Tana and Pepino’s Spaghetti House, Victoria Pimm is bringing her sunny disposition, gritty work ethic, and love for all things hospitality to Elio Volpe as its new general manager…along with great passion, dedication and inspiration.

Previous to Banda Volpi, Pimm was most recently assistant manager at a fellow Cambie Village spot, Vij’s. She also spent 2.5 years at L’Abattoir, under the mentorship of Banda Volpi co-founder Paul Grunberg.

“Victoria has been an integral part of our organization for several years, demonstrating exceptional leadership skills and a strong commitment to our company’s pillars,” says Grunberg. “Throughout her tenure as general manager of Pepino’s and La Tana, she has consistently displayed a remarkable ability to drive growth and foster a positive work environment. Her dedication, vision, and excellent management capabilities make her the ideal candidate to lead Elio Volpe into the next phase of success. Under Victoria’s leadership, we can expect Elio Volpe to continue thriving and delivering exceptional experiences to our guests. Pimm started her career in the back of house at the age of 16 in her home town of Richmond, BC. She grew a passion for baking and pastry from cooking classes in high-school, along with the inspiration of her mother’s continuous love and passion for at-home baking. From there, she quickly realized she wanted to pursue a career in baking and pastry, and attended the Pacific Institute of Culinary Arts. With this education, she jumped right into a leading pastry team position. As Pimm grew experience and connections within the industry, the opportunity of seeing first-hand the enjoyment of the guests indulging in food and beverage was intriguing and she decided to dip her toes into the front of house, where she has been since.

“I am honoured to work with such a passionate, driven, guest obsessed team of individuals and am beyond thrilled to lead the team at Elio Volpe,” says Pimm. “One of the most memorable dining experiences I’ve had was in the small Italian town of Serralunga d’Alba in Piedmonte. The love for hospitality and quality of food was immaculate at Osteria Tre Case — at the end of the meal, each guest is invited to meet the chef-owner on the way out. He insists on personally taking payment and introducing himself to ensure everyone’s experience has met their expectations. True hospitality in its finest form. I still dream about the White Truffle Tagliolini. I can’t wait to bring that same level of hospitality to Elio and get to know our guests on a personal level.”
