On August 18th Royal Dinette’s Kaitlyn Stewart will be heading to Mexico to represent Canada at the finals of the Diageo World Class bartending competition. If you want to get a little taste of some of the award-worthy drinks she’ll be making, head on over to the Dunsmuir St. restaurant and order the Diced Pineapples, a no-waste cocktail Stewart created specifically for the competition. Using all parts of the pineapple including the skin, pulp and tops, Kaitlyn combines the fruit with gin, sake, housemade pineapple gomme, pineapple kasu, lime husk and an absinthe rinse that results in a more ethically sound cocktail that’s delicious to boot!
