Pinche Taco Shop by La Taqueria Opens Next Week

Vancouver, BC | On Monday, November 3rd, 2025, Vancouver’s pioneer in authentic Mexican cuisine, La Taqueria, will debut its highly anticipated project: Pinche Taco Shop, opening at 367 Seymour Street on the corner of Seymour and West Hastings.

Marking a significant milestone in La Taqueria’s 16-year culinary journey, the new location represents the brand’s largest space to date. It also carries forward the legacy of the original Hastings Street outpost—the first ever pinche taco shop in Vancouver, which closed earlier this year.

“The new Pinche Taco Shop is so much more than tacos; it’s about celebrating the culture, flavours, and energy of Mexico in a way Vancouver hasn’t seen before,” says Marcelo Ramirez, co-owner of La Taqueria. “We’ve gone back to basics with a focused menu, high-energy atmosphere, and playful approach, all executed with precision.”

The 1,700-square-foot, two-storey restaurant is thoughtfully designed by the award-winning Rafael Santa Ana Architecture Workshop (RSAAW). Inspired by the vibrant palette of iconic Mexican architect Luis Barragán, the interiors feature a playful combination of soft pinks and seafoam green. The main dining room and bar are located on the main floor, while a state-of-the-art kitchen, complete with a trompo machine and charcoal broiler—rare finds in Vancouver’s taquerias occupies the second level. There will also be a patio that overlooks Seymour street on the first floor.

Executive Chef Maria Ponce has created a streamlined menu that’s deeply rooted in tradition. It features several appetizers – Taco Gorbenador (Sinaloan-style taco made with shrimp and cheese), Taco Olvidados de Frijol (a simple refried bean taco) and Salsa Martajada; six specialty tacos – Pollo al Carbon (charcoal-grilled chicken), Taco de Lechon (suckling pig taco), Taco de Hongos de Temporada (mushroom taco), Taco de Acelga con Huevo (sauteed chard with garlic and onion and a fried egg), Taco de Papas (potato taco) and their signature Trompo de Picaña (slow-roasted Sirloin rump cap). Each will also be available as burrita – a style of filled, and folded flour tortillas traditionally found in Chihuahua and Sonora. To finish, one and only one dessert– Volcan de Dulce de Leche.

The beverage program, led by Tara Davies (Michelin Bib-Gourmand Chupito, Vancouver Magazine Bartender of The Year 2025) and General Manager Denys Bondarenko (currently Bar Manager at Comedor on Yukon), follows the same philosophy– precise yet fun and well executed. Expect Mexican beers, cocktails on tap – Classic Margarita, Raspberry Paloma, and Spicy Pineapple Mezcal Margarita, rotating frozen margaritas, blended Piña Coladas and Mango Chamoyada and of course, their Champaña de la Casa (house champagne).

Like taquerias across Mexico, Pinche Taco Shop Seymour will embrace a fast-paced, counter-service style while encouraging guests to linger over bites and drinks. It’s a vibrant place for power lunches, afternoon snacks, leisure dinner and of course, late night eats. To start, Pinche Taco Shop Seymour is open 7 days a week, from 11am to 11PM on weekdays, and midnight on Fridays and Saturdays.
