The GOODS from Chicha
Vancouver, BC | Guest Chef Benjamin Akira Berwick and Chicha Restaurant Executive Chef Shelome Bouvette will be collaborating on a special Peruvian Nikkei five course dinner paired with varieties of tequila and mezcal on Wednesday, May 25. This event is part of the Vancouver International Tequila Expo week.
Chef Benjamin Akira Berwick is currently the chef at Stages Wine Bar (winner of Vancouver Magazine’s gold award for best Vancouver Island restaurant 2015 and 2016). Chef Berwick brings years of Japanese cuisine experience from his executive chef positions at Hapa izakaya and Zen. He learned and continues to focus on showcasing nature and seasonal ingredients from his years at Bishops. Chef Berwick brings his passion for Nikkei cuisine from his travels and experience cooking at the acclaimed Astrid y Gaston in Santiago, Chile.
Chef Bouvette is known for her innovative and creative modern Latin American cuisine. Currently she is the executive chef and co-owner of Chicha Restaurant, where she focuses on modernizing traditional Peruvian classics with local and sustainable ingredients and her signature fresh flavours and bold, colourful and feminine plating.

Cocktail and Canape Reception (6.30pm-7.30pm) a welcome mezcal cocktail and canapes
Five course tasting menu and pairings(starts at 7.30)
Course 1: Spot Prawn Ceviche (spot prawns, sea asparagus, avocado, dashi, aguile chile) paired with Azunia Platinum Blanco Tequila
Course 2: Snapper Tiradito (snapper, leche de tigre, aji amarillo peruvian chile, cancha corn) paired with Nuestra Soledad Zoquitlam Mezcal
Course 3: Trio of Causa (chilled and whipped potatoes topped with a variety of toppings; vegetable, chicken and dungeness crab) paired with T1 exceptional reposado tequila
Course 4: Lomo saltado (med rare Pemberton Meadows beef, wild onion, sea coriander, fried new potato) paired with Mezcales de Leyenda Oaxaca Tiacuache Mezcal
Dessert: Picarones (sweet potato and pumpkin donuts with local strawberries) paired with Alma de Agave Anejo Tequila
As both chefs share a passion for nature, all seafood will be local and sustainable, meats will be locally and ethically raised and hormone and chemical free, and many other ingredients will be foraged from our beautiful west coast environment.
Tickets are $100 and include both the cocktail and canape reception, the five course dinner and the pairings.

About Chicha
Chicha restaurant is a modern Peruvian inspired tapas restaurant just west of Main on Broadway in the Mount Pleasant neighborhood. The plates bring forth interesting new flavours focusing on the use of Peruvian ingrediants, bright and eye catching presentations, and are meant to be shared amongst good friends and family.
Chicha restaurant was started and continues to be owned and operated by three friends and first time restaurant owners Allison Flook (Executive Chef), Shelome Bouvette (Executive Chef), and Kumiko Umeno (General Manager). Shelome and Allison have a history of history repeating and have worked in kitchens together time and time again over the past years; namely Lolita’s and the Alibi Room. Kumiko never worked with these two prior to this venture and worked in the industry for years before leaving 6 years ago to work in finance only to come back last year to open a new restaurant and adventure with her friends.
The bar manager is Paul Clark formerly with the Cascade Room. Paul creates all the cocktails, in house infuses Pisco and in house made syrups. The cocktail menu changes seasonally and their is a different feature every day.
The wine list is made by consultant David Stansfield and changes seasonally. The Spring/ Summer list is due to be out soon and is expected to offer a larger offering and branching outside South American wines and including more European and BC wines,
The restaurant is open 7 nights a week for dinner and late night (full menu until close); midnight Sunday- Thursday and1am Friday and Saturday and lunch Tuesday- Friday from 11.30am-2.30pm. There is talks of brunch happening soon.
Fun things happening at Chicha
Double Pisco Tuesdays: $5 double pisco cocktails. Choose from Chilcano or Pisco Sours.
Beer and Slider Mondays: $10 for featured 20 oz pint and two sliders. Choose from fish, pork belly, or veggie sliders.
