Edible Canada Introduces New Chef de Cuisine, Launches New Spring Menu

Vancouver, BC | We are thrilled to announce the appointment of our new Chef de Cuisine, Albert Tran. He’s joining us from Sonora Resort, located on one of British Columbia’s pristine Coastal Islands. His experience spans from modern Japanese in Ottawa and Spanish influences in Montreal to contemporary French and regional seafood inspired cuisine at the Marina in Victoria.

Working with the freshest local, seasonal, and sustainable ingredients of BC and preparing freshly caught spot prawns, urchin, crab, sturgeon, and salmon directly from the ocean outside the kitchen doors, gave Albert a perspective he continued to be inspired by while creating Edible Canada’s unique and delicious new menu items.

This month, Albert and the team, are launching our Spring Menu, highlighting local producers and ingredients as well as influences from President & Founder of Edible Canada Eric Pateman’s culinary travels.
