The Goods from Botanist
Vancouver, BC | For the fourth consecutive year, Botanist at Fairmont Pacific Rim will honour Día de los Muertos with an immersive collaboration dinner and cocktail-paired experience. On November 1, executive chef Hector Laguna will be joined by José Luis Hinostroza, chef-owner of Tulum’s award-winning ARCA, to present a six-course, Mexican-inspired menu with locally foraged and fished ingredients, each paired with cocktails in celebration of the sacred holiday.
The festivities continue Sunday, November 2, at The Lobby Lounge & RawBar for a Día de los Muertos themed pop-up featuring a curated cocktail menu by the ARCA team, vibrant live-music and themed entertainment – offering guests an engaging cultural celebration of the tradition. Reservations are not required; seating will be available on a first-come, first-served basis.
ARCA is one of Tulum’s most celebrated and awarded restaurants, currently No. 32 on Latin America’s 50 Best Restaurants list and No. 27 on North America’s Best Bars list. The open-air restaurant is known for its contemporary approach to Mexican cuisine, focusing on open-fire cooking and locally sourced ingredients from the Yucatán Peninsula.
“José and I share the same cooking philosophy in that we honour the seasonality of the local ingredients we cook with,” says Laguna. “I look forward to showing José the coastal waters and forests of British Columbia, where we will fish and forage, then develop our collaboration menu together.”
Tickets for the November 1 dinner are $279++ per person and are available now online. Each course will be paired with cocktails inspired by the vibrant traditions of Día de los Muertos.
“This is our fourth year hosting a Día de los Muertos collaboration weekend – it has become a tradition we look forward to,” adds Sceney. “In the past, we’ve celebrated with Mexico City’s Hanky Panky, Vertical Comedor Evolutivo, and Baltra Bar. Arca’s cocktail list is experimental and bold, just like its restaurant. We look forward to bringing some of those elements into our paired cocktails.”
