Vancouver, BC | MARKET by Jean-Georges will close its doors on January 1, 2020 to prepare for the creation and launch of a new restaurant from the Shangri-La Hotel, Vancouver team in April 2020. The new culinary destination will retain all of the existing culinary talent, including Executive Chef, Ken Nakano and Chef de Cuisine, Alex Kim, as well as the stellar front of house team.
MARKET by Jean-Georges will celebrate “one last night with Jean-Georges” on New Year’s Eve with a special New Year’s Eve menu featuring his greatest dishes. Jean-Georges’ signature ‘vibrant cuisine’ – a reflection of classic French training, 10 years spent in Asia and the Culinary Concepts’ philosophy of ‘global in reach, local in content’ – features intense flavours and textures resulting from the use of vegetable juices and fruit essences, light broths and herbal vinaigrettes. Throughout November, MARKET by Jean-Georges will offer an exclusive menu for Vancouverites to enjoy the classic flavours of chef Jean-Georges Vongerichten. The featured set menu will run from November 1 to 30 and will include the steamed shrimp salad, the famous slow cooked steelhead with truffle and the warm chocolate cake with vanilla bean ice cream. MARKET’s a-la-carte menu will feature the ‘best of the best,’ a collection of Jean-Georges’ most popular dishes, customized to highlight the richness of British Columbia’s local products, with special focus on seafood of the Pacific waters.

Shangri-La Hotel, Vancouver’s new restaurant will open April 2020. While maintaining the culinary and service excellence diners love at MARKET by Jean-Georges, the new restaurant will serve a new dining and cocktail menu and will add an afternoon tea service. The cuisine will continue to celebrate local flavours with seasonal farm-to-table ingredients sourced from the local community. The new restaurant design will feature a multitude of dining options including a bar, lounge and several private dining rooms.
