On August 18th Royal Dinette’s Kaitlyn Stewart will be heading to Mexico to represent Canada at the finals of the Diageo World Class bartending competition. Using all parts of the pineapple including the skin, pulp and tops, Kaitlyn combines the fruit with gin, sake, housemade pineapple gomme, pineapple kasu, lime husk and an absinthe rinse that results in a more ethically sound cocktail that’s delicious to boot!
