“Subject To Change” is Moving Into 1879 Powell Street in Early October

A new restaurant concept is heading for the old Elephant location at 1879 Powell Street. Subject to Change will feature a rotating roster of chefs, each taking over the space and making it their own for one week at a time.

Launched in late 2021, 524 sqft Elephant showcased the inventive cooking of Chef Justin Song-Ell. The restaurant quickly gained recognition, earning a spot on the Michelin Guide’s recommended Vancouver restaurants in 2022 and 2023, as well as a place on the 2024 Canada’s 100 Best Restaurants list. Sadly, Elephant permanently closed last month (August 2024). Subject To Change opens doors in early October.

From co-owners Miki Ellis and Stephen Whiteside: “Welcome to our tiny 18-seat restaurant in East Vancouver, where every week, a new chef is cooking. The menu will be different depending on the chef, so you’ll experience the five-course menu through their lens and style of cooking. Feel like you’re eating at the chef’s kitchen table and enjoy the adventure of their set! For beverage, you can expect a tight list of natural wines and sake, alongside a select few cocktails and craft beer. Due to the intimate size of our room, we require reservations to dine.” The team is aiming to keep the price for each week’s multi-course menu at a reasonable $80 per person. Service will run from Wednesday to Saturday.

First up is Vancouver chef Mark Singson, who will be running the kitchen from October 9th to 12th, putting out five courses showcasing West Coast ingredients through a vibrant lens of Filipino flavours. Reservations are now live on Tock, so jump in here while you can!
