The Goods from St. Lawrence
Vancouver, BC | Vancouver’s award-winning St. Lawrence restaurant is celebrating its eighth anniversary by transporting guests on a guided tour of Québécois cuisine, culture and Chef/Owner J-C Poirier’s culinary journey when it introduces a new ‘Table Champêtre’-inspired menu for August at the Michelin-starred destination (269 Powell Street).
The menu takes its cues from Québec’s ‘Table Champêtre’ (Dining Out on the Farm) culinary experiences and will celebrate the region’s farmers, foragers, fishers and sustainable food systems that provide the fresh, local ingredients delivered to St. Lawrence’s back door daily. It also allows Poirier to pay homage to his youth and formative years spent honing his craft in kitchens like Les Remparts and Toqué! before heading West and opening St. Lawrence in the Railtown District in 2017.
Poirier’s four-course ‘Table Champêtre’-styled menu will feature an ever-changing array of classic, home-spun Québécois fare as well as personal favourites from his own archives and recipes from the ‘Where The River Narrows’ cookbook that the chef published in 2022 via Random House and won a gold medal in the category of Regional/Cultural Cookbooks at the Taste Canada Awards in 2023.
“This menu is all about going back to the roots,” says Poirier. “The roots of our local farmers and the quality of produce they provide, the roots of what makes this restaurant such a special place for all of us, and the roots of Québécois cuisine and culture. This is my way of paying homage to Les Québécois and all the larger-then-life ways that we’re excessive, bold and full of personality, and that ebullience will be mirrored in the way we’ll approach and prepare each dish.”
Reservations for the Table d’Hôte ‘Table Champêtre’-inspired menu are now available online at stlawrencerestaurant.com for $125 per person plus tax and gratuity. Guests can also add optional enhancements and beverage pairings handpicked by the St. Lawrence team during each dining excursion.
This spring, Poirer continued to build on St. Lawrence’s renown by opening a sister restaurant on the corner of Fraser & 27th in Vancouver’s Fraserhood called Chez Céline — a cozy, inviting enclave that channels the edgy charm of Montréal, effortless elegance of Paris and the communal warmth of Québec’s beloved casse-croûtes.
