by Andrew Morrison | A couple of weeks ago I stopped in at a tiny, 308 sqft box Yaletown to meet up with Neil and Wendy, owners of what will very shortly become Dog & Squirrel, a specialty cafe selling hard-to-find beans and local and international paper goods. Unit 120 inside “The Shops” arcade at 1058 Mainland Street is a bit of a gamble, location-wise, but if they’re doing batch brew and pour over using beans from the likes of Calibre, Rossi, Moja Lab Series, and Handworks (among others), then the seven seater might just attract the requisite number of brew-savvy supporters. Their plan sees five or six constantly rotating small roasters (mostly Canadian) using the Torch Mountain dripper system. They’ll also be batching a la AeroPress and pulling shots on an espresso machine. I’m especially curious about Wendy’s paper collections. She used to work in letter press in the UK (where she and Neil met), and I came away from our short conversation thinking she probably had great taste. They just had their health inspection yesterday, and hope to softly open next weekend. The images below are two weeks old, so I imagine it looks nearly finished by now. Nevertheless…
