Published on Main Welcomes San Francisco’s Kiln for One Night Only Collaboration Dinner

Vancouver, BC | For one night only on September 29, 2024, S. Pellegrino presents an exclusive chefs collaboration dinner between Gus Stieffenhofer-Brandson of Published on Main and John Wesley of San Francisco’s highly lauded and newly minted one Michelin star Kiln. The multi-course dinner will feature the chefs’ shared culinary approach which leans Nordic – highlighting global flavours with fresh, local seasonal ingredients, alongside fermentations and preserves. Tickets are now available online.

Kiln is one of San Francisco’s most talked about new restaurants. It opened just last May in 2023 in the city’s charming Hayes Valley neighbourhood and was one of seven new establishments to receive a Michelin star at the recent Michelin Guide California announcement.

“I was lucky enough to dine at Kiln last fall, and it was one of my favourite meals I’ve had in the last year,” says Stieffenhofer-Brandson, executive chef, Published on Main. “World class dining, very mature cooking but still fun and approachable. John’s incredibly talented. I can’t wait to cook with him next month and show him what Vancouver has to offer.”

Wesley honed his craft in some of the most celebrated kitchens, including two Michelin-starred Commis, Aska, and Sons & Daughters. His restaurant Kiln is known for its beautifully curated, technique-driven tasting menus, focused on seeking out the finest quality ingredients from around the world – a study in intention, simplicity and purity of flavour.

Tickets are $360++ per person, inclusive of beverage pairings, and can be purchased online now. Guests can expect to enjoy an 11-course tasting dinner featuring fresh, fall ingredients, such as chanterelles and BC corn.

“I’m excited to bring Kiln to Vancouver for a night and really looking forward to the collaboration with Gus and the Published team,” says Wesley, executive chef and partner of Kiln. “I’ve never been up to British Columbia, so hopefully we can take in some sights as well! We were honoured to be invited.”

Wine director Jayton James and bar manager Dylan Riches are currently working on beverage pairings, which will feature a variety of wines, spirits, and cocktails.
