Published on Main Celebrates the Holiday Season with a ‘December Duck Feast’

Vancouver, BC | Published on Main (3593 Main Street) is welcoming the holiday season with the return of its popular December Duck Feast — a limited-edition menu featuring chef-partner Gus Stieffenhofer-Brandson’s take on festive winter cooking. Guests are treated to a whole Crown Roast Duck and four accompanying sides. Reservations are recommended as only a set number will be available each evening, from December 1 to 30, 2025.

“We decided to offer my take on a Christmas duck feast last year, and it really took off,” says Stieffenhofer-Brandson. “Serving duck instead of turkey is a German tradition during the holidays. Guests have been inquiring about it already, and we wanted to bring it back. This year, we’re going with a mandarin-scented duck spice and a new set of sides.”

Published on Main’s December Duck Feast ($175) features a whole Crown Roast Duck from Legends Haul, seasoned with a mandarin-scented spice blend of cracked pepper, coriander, fennel seed, and Szechuan pepper. The dish, presented sliced, is finished with a duck jus of orange caramel, fresh mandarin juice, black vinegar, and foie gras fat, and brushed with fermented honey.

The dinner includes: Duck Broth with duck confit dumplings and chives; a Wild Mushroom Sauté with roasted wild mushrooms, blanched French beans, crispy duck confit, and a teriyaki-style duck jus infused with garlic, ginger, soy, and chilli; and a Crunchy Winter Salad of fresh, marinated, and pickled white cabbage layered with craisins, mandarin segments, and topped with a sesame-elderflower dressing. Rounding out the menu, a Published on Main signature – Black Pepper Duck Wings, confit-style with a black pepper sauce and topped with scallion.

“It’s always great to see guests come in with loved ones to celebrate a special occasion and the holidays are an annual, month-long event,” adds Aaron Sayomac, general manager, Published on Main. “We hope this gives people even more reason to come together for a memorable meal.”
