The Goods from Published on Main
Vancouver, BC | Published on Main officially opened its doors on December 21, 2019 and in the past five years, executive chef Gus Stieffenhofer-Brandson has created more than 2,000 unique dishes. To celebrate this milestone, Published on Main is bringing back some of his most beloved creations. From January 6 to February 9, 2025, guests can enjoy and revisit a rotating selection of “greatest hits”. Reservations can be made online now.
“I remember each and every dish we’ve created, tasted, and put on our menus from day one,” says Stieffenhofer-Brandson, who was named Vancouver Magazine’s Chef of the Year in 2022. “Revisiting these favourites almost feels like opening a time capsule – we got through the pandemic, and it’s exciting to see how these dishes still resonate with us and our guests.”
Each week for five weeks, Published on Main will revisit some of its most beloved dishes, taking guests on a journey through the past five years in successive order. For the first week, from January 6 to 12, 2025, the feature menu celebrates its early years, 2019 and 2020, and will include: its popular Prawn Toast with black garlic, shiitake, and shiso; Potato with tobiko, iceberg, and kewpie; Agnolotti with fresh cheese and farmers sausage; original Schnitzel with zucchini and roasted yeast; and for dessert, Chocolate with chocolate, chocolate, and seabuckthorn.
The following weeks will highlight key dishes from 2021 to 2024. Returning favourites include: the Pacific Octopus with sweet chilli supreme; Sweetbreads with honey hot, and St. Agur creme; Burn Morel Sopressini with herb creme; Bunny Crepe with wild mushroom blanquette; and Charred Ice Cream with raspberry and rye.
“This milestone is an opportunity to reflect on the great support we’ve received from our amazing team, as well as our community in the past five years,” adds Cody Allmin, co-founder of Boxset Collective, the team behind Published on Main, Bar Susu, El Gato Gab Gab, Mama Said Pizza, and Twin Sails Brewing. “By bringing back some of our most-loved dishes, we hope to not only reconnect with guests who have been part of our journey, but also share a taste of that history with new diners.”
In addition to the rotating menu of “greatest hits”, the fifth anniversary festivities will also feature cocktails from years past.
Since its opening, Published on Main has garnered several prestigious accolades, including becoming the first restaurant in Western Canada to achieve first place on Canada’s 100 Best List in 2022, earning a star on Michelin Guide’s inaugural Vancouver list, landing on La Liste (The World’s Best Restaurant Selection), and receiving multiple individual team talent awards.
