Cauliflower Truffle Soup + Sausage Arancini From Cioffi’s

Meat shopping at Cioffi’s in Burnaby yesterday got us really hungry so we walked a couple doors down to its pret-a-manger “Cucina” with sandwiches in mind. We were instead quickly seduced by the crispy sausage arancini that we (couldn’t help but) watch one of the cooks busily prep behind the counter. We ordered several of these golden orbs and rushed them home (together with some earthy Cauliflower Truffle soup) for a pan-roll in hot oil and a dust of smoked cherry wood sea salt from Jacobsen. The result? Perfect balms against the chafe of rain — enjoyable to the last crumb. If you’re feeling especially seasonally dispossessed (welcome to March), dunk ’em in the soup.
