Chef Felix Zhou Steps Into His First Executive Role At “The Parker” On Union St.

Vancouver, BC | The Parker is excited to introduce one of Canada’s prodigious young talents, Chef Felix Zhou. Originally from Hunan, China and raised right here in Vancouver, Felix has been focused intently on making the most of his young culinary career. Most recently the Executive Sous Chef at Whistler’s Nita Lake Lodge, Felix has also been on the teams at West under David Hawksworth and Warren Geraghty. While in London, he earned his stripes at Jeff Galvin’s Michelin-starred La Chapelle and with Michelin Chef Simon Rogan, whose pop-up concept Roganic in Marylebone garnered rave reviews.

With his first Executive Chef position, Felix is excited to be in Vancouver’s historic and dynamic Chinatown and creating a unique, destination-worthy menu. Diners can expect refined presentation showcasing the best of BC’s seasons along with mouth-watering displays of influences and inventiveness. Along with the award-winning team led by Steve Da Cruz, The Parker is finishing a fantastic 2014 with a bang.

The all-new menu will tempt diners with warm wintry fare such as Salt-Baked Celeriac, garnished with pickled mustard seed caviar and apple emulsion; Hand-made Dumplings, seared and stuffed with roasted aubergine then drizzled with pinenut Thai curry; And for the purists, Chef Felix’s vegetarian demi-glace will lift wild mushrooms and roots out of the cellar and into your heart. But save room for his Cheesecake with Endive jam or the torched Persimmons with Kiwi sorbet!

A newly elevated Dégustation will still be the Mealshare hot ticket this winter and diners can depend on an excellent choice of wine and cocktails from Steve’s careful selection as well as his deft touch on the service side. The Parker generates less than one pound of waste in a month and has become a sexy destination for the discerning diner. Two seats at the bar will deliver a ringside view of Felix Zhou delivering his innovative menu whilst Steve delivers dynamite cocktails and expounds on his wine program based on the Columbia Watershed Basin. Open for Dinner only, the little room seeks to accommodate all dietary restrictions with aplomb.

The Parker serves dinner Tuesday through Saturday from 5:30pm to 10:30pm, with drinks until midnight. Reservations are recommended and can be made via theparkervancouver.com or by calling 604 779 3804. Walk-ins are very much welcome.
