Vancouver, BC | The Parker is excited to deliver the latest and greatest menus from Executive Chef Curtis Luk and Barman/Owner Steve Da Cruz. Don’t miss Socca Provençal with roasted summer squash, crispy garlic and Picholine olive relish. Also turning heads is the gorgeous Panzanella salad with house-made Panisse, Manouri Sheep’s cheese, black pepper purée and the finest BC heirloom tomatoes from Chilliwack’s Allen family. The carrot soup with Sweet Cicely herb, carrot chips, summer peas and Pine Nut – Yuzu purée is definitely a highlight, too.

At the bar, Steve Da Cruz and Nich Box have a solid summer arsenal of cool concoctions to complement both dinner and good conversation. People are definitely talking about Nich’s Saline cocktails like the Flatbush (Rye, Saltspring Island Blackberry Port, Punt e Mes & Saline) and the The Brace (Ricard, Egg White & Saline). And, of course, Steve always has some amazing wine to share, including the latest from Sychromesh, Clean Slate, and Liquidity, among several others.

For dessert, save room for Curtis’ Chocolate Mousse with pickled BC cherries, toffee sponge and de-hydrated chocolate crisps, or fend off your friends from stealing a bite of your Avocado Semifreddo with Coconut Tapioca and edible flowers. ABOUT THE PARKER

The Parker generates less than one pound of waste in a month and has become a sexy destination for the discerning diner. Two seats at the bar will deliver a ringside view of Curtis Luk delivering his innovative menu whilst Steve delivers dynamite cocktails and expounds on his wine program based on the Columbia Watershed Basin. Open for Dinner only, the little room seeks to accommodate all dietary restrictions with aplomb.
