A Look Inside “Fable Diner” At Broadway & Main As Demolition Continues

by Andrew Morrison | I met up with Fable chef Trevor Bird yesterday to take a look at progress inside what will eventually become his new restaurant at Main and Broadway. Located in what used to be Reno’s Diner at the base of the historic Lee Building, Fable Diner is set to open this summer with modern takes on classic diner breakfasts, lunches, and dinners. We first mentioned the diner back in September before Trevor and his partners took possession. They started demolition a few weeks ago and are well into it now. It looks as if they have their work cut out for them, stripping the big space back to basics before they start building it up again. Everything is getting tossed, from the booths and pony wall to the weirdly shaped bar and cafeteria-style kitchen line.

Trevor shared a few items he plans for the menu. Though none of this is totally locked down, he mentioned a burger inspired by the original Reno’s (priced at $6); breakfast brioche sandwiches with house ham and aged cheese; hoisin duck pancakes that sound reminiscent of the ones at the long gone Monsoon around the corner (remember those?); beef dip with umami-spiked jus (c/o Parmesan rind); karaage chicken sandwiches; beef tongue Reubens; milkshakes; malteds; sundaes, and so on.

It all sounds well worth the wait that these photos imply…
