You Need to Try ‘The Lumiere’ Cocktail at The Vermillion Room

Here’s the thing about The Vermillion Room at The Fairmont Banff Springs: you really can’t go wrong with a drink order. The space itself – recently redone in the style of a French brasserie – is a feast for the eyes, and the mountainous view is, of course, singular in its beauty, but every drink on the menu is prepared with care. So I mean it when I say you can order anything here and it will be delicious.

But if I had to pick a starting point, I’d recommend The Lumiere. The cocktail was originally created by Nitehawk Cinema Beverage Director Jen Marshall and was inspired by the Oscar-nominated film, Hugo. With a bar team committed to highlighting local distilleries, The Vermillion Room’s iteration of the drink uses Wildlife Gin, which is out of Canmore, AB. The nose on the base spirit offers up pungent notes of citrus with a hint of banana peel. Once combined with Yellow Chartreuse, St. Germain and lime juice, the shaken sipper emits a subtle whiff of evergreen. Finished with a dash of Angostura bitters and a lemon twist, it packs a boozy punch but goes down rather easily. Remember to sip yours slowly and linger with the stunning view.
