The latest project for the team behind such award-winning Vancouver restaurants as Chancho Tortilleria, Nuba and the former Fayuca, Alimentaria Mexicana is now open for dine-in and patio service and will become a multifaceted concept that features a licensed dine-in cantina and take-out window, tortilla factory, educational space and online and retail shop that offers the highest quality local and internationally sourced artisanal Mexican food products, provisions and more. Located on Granville Island, Alimentaria Mexicana is a culinary and cultural experience that showcases the time-honoured techniques, traditions and products of Mexican and local artisans in an authentic way that pays homage to their origins.
Alimentaria prioritizes quality and integrity of ingredients, and those who produce them, and is vertically integrated at every step of the journey. Behind every chile, kernel of corn and native grain sourced from Mexico are thousands of years of heritage, genetics and biodiversity. These are stories of hardworking farmers that planted the crops, tended and harvested them with care and are now able to reap the rewards and improve the lives of the people who live and work in their communities.
At its core, Alimentaria is about going beyond borders and connecting communities around the world. The concept aims to celebrate the diversity of Vancouver and the communities of Mexican artisans, farmers and craftspeople who partner with Alimentaria to supply wares, ingredients and techniques. There is a story to tell that is thousands of years in the making, and one that lives on to this day.
