Mæst Food and The Dessert Club are Teaming Up for the “Be Kind to Earth” Dinner

Folke Restaurant is hosting a sustainable vegan dinner on Tuesday, September 10th – and it’s one hell of a double-header! Chef Tomoko Tahara, of Mæst Food, and Pastry Chef Sam Shem, creator of The Dessert Club are combining forces for what is sure to be one memorable night…

Both chefs are already known individually for their sense of creativity and mindfulness, and both also possess a strong sense of identity in the kitchen. For this special collaboration dinner, they’ll be focusing their respective skills and intentions on creating a cohesive multi-course dinner under the theme “Be Kind to Earth”.

So, what can guests expect, exactly? A variety of exciting and flavourful dishes making the most out of foraged and locally grown, in-season ingredients – check! Aesthetically pleasing and delightfully presented plates – double check! A meal that is both physically and conscientiously satisfying, since it also promotes supporting local farmers and reducing your environmental impact – abso-friggin-lutely… Tickets getting swiped quickly – we’d bet on it.

Here’s how that all translates into a (tentative) menu:

Five-Course Tasting Menu:

Note: The following menu is a preliminary outline and may be subject to changes or additions. Some courses are sharing.

Welcome drink: House made umeshu soda (includes alcohol) or seasonal sober drink

Amuse: Slow cooked Japanese Turnips, fava bean puree, baby carrot (Tomoko)

Snack: Beets & plum marinated in wild rose vinegar, fermented nut cheese (Sam)

Palette Changer: Green beans, pickled unripe strawberries, watermelon, Kudzu jelly, gooseberry leche de tigre (Tomoko)

Main: Lions mane mushrooms, Pumpkin seed praline puree, Lobster mushroom and black hazelnut sauce, Shishito,Cippolini onion, Fingering potatoes. (Tomoko)

Dessert: Chocolate, BC hazelnuts, Wild blackberries (Sam; still in development)

There are two seatings to choose from: an early bird dinner 5pm slot (excellent for all you responsible folk feeling wary about going out on a weeknight!), or a late(ish) 8pm one. Tickets are $85 per person including all five courses, the welcome drink and tip. Additional beverages are also available to purchase separately the night-of. Snatch yours up here.
