Located in the chic Moda Hotel on a quiet-yet-central corner of Downtown Vancouver, the casual Italian eatery offers an expertly crafted tasting menu with wine pairings. Cibo Trattoria’s Valentine’s Day menu promises to fuel romance, thanks to a six-course, rustic Italian menu crafted by Executive Chef Neil Taylor and impeccable wine pairings by Head of Operations Edward Perrow. To start, local oyster with blood orange, black pepper and Tuscan extra-virgin olive oil is paired with Cantina rosé proseco (Italy); bruschetta of buffalo mozzarella, slow-cooked rapini and marinated olives is matched with Terredora falanghina 2009 (Italy). The pasta course — spaghetti nero with dungeness crab, fennel, chili, parsley and orange — is served with Crios torrontes 2009 (Argentina). Next, agnolotti of game birds, red-wine butter, wild mushrooms, crispy sage and parmesan is paired with Cooralook pinot noir 2008 (Australia). Roast 60-day aged beef is served with potato, leek and thyme al forno, red wine roasting juices and Rivera cappellaccio aglianico riserva 2004 (Italy). And because Valentine’s Day isn’t complete without dessert, house-made vanilla ice cream and hot chocolate sauce are matched with Breganze torcolato 2002 (Italy).

Cibo’s Valentine’s Day tasting menu is priced at $90 per couple; wine pairings are $70 per couple. Prices do not include applicable taxes and gratuity. Vegetarian options are available upon request. For reservations call 604-602-9570.
