The GOODS from Campagnolo Roma

Vancouver, BC | Quinto Quarto returns to Campagnolo ROMA on Wednesday, September 26. The Quinto Quarto dinner has gained so much in popularity that ROMA is now offering two seating times, the first at 6:00pm and the second at 8:30pm. This crowd-pleasing dining experience features a plethora of dishes showcasing offal, served alla famiglia at communal tables. Quinto Quarto literally translates to the “fifth quarter” and in the cuisine of modern Rome, refers to offal of butchered animals. The name is appropriate for a number of reasons: offal amounts to approximately a fourth of the weight of the carcass and is as important as any of the outer quarters in Roman cooking; traditionally, in Rome, cattle was divided into quarters. The first “quarto” was dedicated to be sold to the nobles, the second for the clergy, the third for the middle class and the fourth “quarto” was for soldiers. The poor could only afford the offal or fifth “quarto”. Tickets for the supper are $49 and are available for purchase online at here. Take a look at the menu and get all the details after the jump…

Chefs Ted Anderson and Nathan Lowey are dedicated to keeping this important Roman tradition alive and will be hosting a Quinto Quarto dinner at ROMA a few times throughout the year.
