You Need to Try the ‘Amadeus Cho’ Cocktail in Chinatown

Chinatown’s beloved Bao Bei continues to enjoy the success that most restaurants only dream of — after nearly 9 years in business, the French/Shanghainese brasserie still sees line-ups on a nightly basis. While this is no doubt a direct consequence of the kitchen’s delicious, ever-evolving food menus, the stellar bar program deserves equal credit, as it has always produced the sorts of magical drinks that keep guests returning time after time.

Take, for example, the Amadeus Cho. In a nod to the Marvel Comics character of the same name, Bar Manager Jason Browne plays on a classic Treacle to create a drink that’s simultaneously bright and complex. Browne uses a solera-aged rum as the base spirit (solera being a process of fractional blending in which the finished product is a mixture of ages of your distilled spirits….at least that’s what Wikipedia tells me). With the additions of Cynar, salted apple cordial and some effervescent Cava, the finished cocktail hits all the right notes — a touch of sweet, a hint of bitter and some bubbles to bring it all home.
