New Wine Bar “Dear Gus” Slated to Begin Construction in Mount Pleasant

First-time restaurateur, Rachel Lee, is on track to open Dear Gus Snack Bar in Mount Pleasant later this Summer.

Located just off the alleyway between East 4th and East 5th Avenues, on the ground floor of Westbank’s new ‘M2’ building at 2040 Quebec Street, Dear Gus (which takes its name and emblem from Lee’s Holland Lop bunny, Gus) is still under under construction, but when I sat down with Lee to talk about the project last year, the image I walked away with was of an intimate wine bar merging sophisticated and effortlessly cool Parisian chic with a warm and welcoming atmosphere in a comfortable room. Anticipate a rotating menu of European-inspired small plates—think French, Spanish, Italian, and Portuguese—all crafted to complement a fine glass of wine.

Architect Nicholas Waissbluth is on deck to help realize the concept, with an assist on finishes and decor from design consultant Gillian Segal Design. As long as the City of Vancouver takes care of their part of the process at a reasonable pace, we could see doors open within the next few months. We’re looking forward to visiting.
