Where Chef Ciaran Chung Eats and Drinks on his Precious Days Off

The Dishes is a new Scout column that asks Vancouverites to walk us through a map of their ideal day and night on the town. We’re talking breakfast, lunch, happy hour, dinner and late night cocktails. Tax and tip included.

Today we get the low down from Ciaran Chung of the newly opened Coquille Fine Seafood in Gastown. Ciaran has soldiered his way through some of the best kitchens in Vancouver in recent years, among them L’Abattoir, Savio Volpe and the always missed Boneta. Aside from being a great cook, he regularly entertains on social media; he’s one of those guys that always seems to be up to cool things on his rare days off!

Good morning. What’s for breakfast/brunch?

For breakfast, keeping it light, I’d be at Red Wagon for the trucker breakfast. It’s always perfect.

Where should we meet for coffee/tea?

We would head to Matchstick for an Americano and the gigantic almond croissants.

Now we’re hungry again. What’s for lunch?

Lunch would find us down on Granville island at Sen Pad Thai. They have the tastiest chicken wings and I always get the Pad Siew beef. Liberty wines is around the corner if you want to take it outside for a summer picnic.

Who has you figured out at Happy Hour?

Happy hour would take us to Merchants Workshop on Commercial Drive. Doug and Lindz always have something fun going on with their food and drink program. I usually crush a beef tartare or two.

What’s for dinner?

Whenever I can find time, I really enjoy Savio Volpe for the crispy pig head and bitter greens salad.
