The Carbonara-Like ‘Mazemen’ Ramen That We’d Eat Everyday If It Was in Vancouver

I know there is mazemen, or broth-less ramen, available at least a couple of ramen shops in Vancouver (eg. at Kokoro on Victoria Dr.), but as far as I’m aware none of the bowls are put together in a fashion similar to that which is made fresh at the tiny ramen bar inside Brooklyn’s Osakana. This one sees thicker noodles tossed in scallion/ginger oil, plus thick pieces of torched bacon and a soft boiled egg – the latter being pierced by the diner, its yolk saucing up the lot. The result is a soup-less soup that looks to be reminiscent of a fettucine carbonara. If anyone knows if this is being done in Vancouver (Dennis?), please speak up as I don’t want to have to make this at home!
