Gastown’s Pourhouse Gets Into The Holiday Spirit With Special Wintry Cocktails

Vancouver, BC | This year, Rhett Williams has created a really cool and festive cocktail menu for the season. Try the very special Tom & Jerry, a popular 19th century winter drink often served in saloons. Batter is pre-maid from scratch and spiked with alcohol. Pourhouse has recreated Jerry Thomas’ recipe from the 1860’s by whipping egg yolks and whites then folding in sugar and adding fresh ground christmas spices. The team adds a little flair of their own with the addition of vanilla bean and fresh orange peel. This batter is spiked with some very nice 12-year old Jamaican rum and topped with hot water, then served with some fresh cinnamon. It’s rich, not too sweet, and very strong — a perfect nog-style drink for anyone allergic to dairy.

Pourhouse has also brought back two popular classics – a Mulled Cider and a traditional Egg Nog. The Mulled Cider is made with local organic BC cider and spiced in-house with cinnamon, allspice, cloves, star anise, dried citrus, fresh citrus and cardamom. The fragrant mix is then spiked with bourbon and bitters and served hot. The Egg Nog is made with Jerry Thomas (the father of American mixology) in mind. The traditional Nog is made fresh to order, and this year is made up of a mixture of cognac and aged rum, cream, whole egg and a special addition of Jerry Thomas’ own decanter bitters for a clove/allspice flavour.

Remember the Night – Spanish brandy with local unsweetened cranberry juice, fernet branca, and white chocolate syrup – a fun mix of mint, chocolate, and bitterness.

Lady in Satin – fernet branca and mint liquor – the perfect winter digestif.

Fenster Flip – overproof bourbon, dark rum and brandy added to cream, whole egg and turbinado sugar – this is a beast.

Los Angeles – a flip with bourbon, sweet vermouth and lemon juice – a lighter option for the first-time-flip-et.

Just southeast of the Steam Clock in Gastown, Pourhouse is born of century-old styles of drinking and dining. The 100-year-old building was built in 1910, as home to the Leckie Boot Company – the original structure crafted with Douglas Fir ceilings, supported by large wood pillars, and brick walls. Pourhouse is furnished in antiques of the era – complimented by custom creations. Every piece in Pourhouse has a story. The cornerstone is the 38 ft. bar – lovingly handcrafted from 120 year-old planks of reclaimed Douglas Fir. Entrance and hallway walls are finished with era-inspired textures and gold leaf detailing – no aesthetic left unconsidered.

The cocktails have an old-fashioned soul, in variations both plain and fancy – the catalyst for the entire concept. The wine list gets its inspiration from the turn of the century, and is priced to encourage sharing and discovering. Beers cover the range of tastes and styles – several selections representing the true ale craftsmanship of BC and the Pacific Northwest. Serious about coffee, Pourhouse serves a beautiful local roast, crafted with a handmade Synesso Espresso machine – overall, a focus on quality over quantity, with a particular interest in Whiskey and Whiskey applications to cocktails. The true heart of Bartending is shown through the creation of personalized experiences.

Food is designed with inspired and skillful technique, though born of familiar comforts. Hearty and mouth-watering meals with a sense of familiarity are done in a homemade style using fresh, local and seasonal ingredients.
