Chef Kristófer Hamilton Lord is Landing at Dear Gus for a Two-Week Stint, Oct. 7-18th

Mount Pleasant’s twee-est, blue-est wine bar, Dear Gus, is making a big move this October, by welcoming seasoned chef Kristófer Hamilton Lord into its kitchen.

Chef Hamilton Lord has racked up some impressive international credentials over the past ten years, working in such notable kitchens as Manresa (Los Gatos, California), Amass (Copenhagen), Air CCCC (Singapore), Kadeau (Copenhagen), and Early June (Paris) – the latter, where he serendipitously crossed paths with Rachel Lee (owner of Dear Gus)…which leads us to his imminent Vancouver pop-up. The two-week-long kitchen takeover, from Tuesday, October 7th through to Saturday the 18th (Dear Gus is closed on Sundays and Mondays), marks Dear Gus’ first international takeover.

The menu for Chef Hamilton Lord’s stint at Dear Gus, we’re told, is going to be a la carte style, with dishes that are “product driven” and “laced with bold, spicy and fresh flavours influenced by his many travels” – which means Southeast Asian, Scandanavian, French, and Icelandic culinary inspiration is all on the table. Curious how it shapes up? Reservations for the Thursday through Saturday, both weeks, are already filled up; however, Tuesday and Wednesday night time slots (October 7-8th, and 14-15th) are still available for groups of 2-6 diners – for now! Bar seating will also be saved for walk-ins only, if you’re a strictly off-the-cuff type and want to leave your luck until the last minute. Now to apply some added pressure: Chef Hamilton Lord’s next move is to open his own restaurant in Iceland, which means that this might be your only chance to eat his food without having to shell out some serious dough on flights in the near future, if not forever…
