Victoria Cocktail Pros To Launch ‘Foxtrot Tango Whisky Bar’ In August

Well respected Victoria barman Shawn Soole (ex-Clive’s, Little Jumbo) is pairing up with Shane Clark and Jill Tulloch of Clarke & Co. to launch a new 35-40 seat liquor primary cocktail bar this summer. Foxtrot Tango Whisky should arrive at 721 Humboldt Street in the Doubletree by Hilton hotel at some point this August. Construction is well underway.

The new bar will have a 50’s Los Angeles theme and will serve up elevated takes on drinks associated with the era (eg. clarified Strawberry Daiquiris on tap, Milk Punch White Russians, et cetera). The space has a small kitchenette, from which I’m told will emerge dishes like ceviche and carpaccio (“Nothing too crazy,” Shaun says).

It sounds like a lot of fun; given the talents and personalities involved it’s likely to attract anyone appreciate of a well made made cocktail. We’ll check it out and report back with photos shortly after it opens.
