Partner and Chef Alex Chen, along with Executive Chef Derek Bendig and Chef de Cuisine Jasper Cruickshank, design custom multi-course menus that showcase the restaurant’s award-winning approach to fine dining, emphasizing both creativity and the highest-quality ingredients. Complementing the culinary artistry, Bar Manager Zack Lavoie delights with signature cocktails, while Wine Director Kathryn Woods ensures flawless pairings for any occasion. Celebrate Thanksgiving in Style
This year, guests can celebrate American Thanksgiving with a festive menu supplement that highlights the flavours of the season. The Thanksgiving menu includes Butternut Squash Soup with toasted pumpkin seed oil, spiced maple Chantilly, and crispy sage; Roasted Turkey with mashed potatoes, stuffing, glazed root vegetables, gravy, and cranberry sauce; and Apple Tart Tatin with caramelized apples, apple compote, puff pastry, and vanilla ice cream. Late-Night Vibes
Wild Blue turns up the energy with late-night fun, including indulgent bites like chocolate fondue. Guests can sip on the Negroni Pinoli, Air Canada enRoute’s Cocktail of the Year, while revelling in a vibrant atmosphere from 10 pm onward. Whether it’s a casual night out or a festive gathering, the Wild Blue Late Night Menu promises a delectable and exciting way to end the evening.


Christmas and New Year’s Eve Extravaganza

Ring in the New Year with an elegant dining experience at Wild Blue. Guests can choose from two seatings:

First Seating: A 3-course menu priced at $179++ per adult, with a reduced price of $89 for children under 12. First seating is 5:00 pm to 6:30 pm, and offers a two-hour dining experience for all guests.
Gala Seating: A 4-course menu priced at $279++ per guest, inclusive of a glass of Perrier-Jouët NV Champagne to toast to the new year at midnight. Gala seating is available from 8:30 pm to 10:00 pm.
