I don’t like to cook squid and octopus as much as I love to eat them. The preparation just grosses me out. It could have been worse, however. Hundreds of millions of years ago, the earliest ancestors of their genus wore hard shells, which would have added to the nightmare of a knife job. In this short video, PBS Eons explains how evolutionary adaptations steered cephalopods to eventually shed their protective outer coverings so they could more easily escape the clutches of those who also found them delicious.
