Shaun Layton Does ‘The Dishes’

The Dishes is a repeating Scout column that asks Vancouverites to walk us through a map of their ideal day and night on the town. We’re talking breakfast, lunch, happy hour, dinner and late night cocktails. Tax and tip included.

Good morning! What’s for breakfast/brunch?

Those who know me know I love making breakfast and loathe the idea of going out for brunch. I’m the last guy to line up for eggs, but I love cooking them. If I’m going out for something to eat in the morning, I’m definitely going to Livia on The Drive. The coffee is great, anything on bread is the best around, and the crew there is awesome.

Where should we meet for coffee/tea?

Propaganda in Chinatown has the espresso game locked down, and they always have cool bags to buy for home. If I’m going somewhere close to the shop, Cartems is quick and great, and Our Town is good for a meeting.

Now we’re hungry again. What’s for lunch?

I went back to Au Comptoir recently and forgot how great it was. There aren’t many places in Vancouver that stick to their concept and are so authentic. They nail the French bistro. It’s so good at lunch…the tartare and frites, pastis, rosé — you’re all set.

Who has you figured out at Happy Hour?

We usually sneak out for a cheeky beer when our Happy Hour finishes. Brassneck or Main Street Brewing are so good for afternoon beers, though they don’t actually do a Happy hour, wink wink nudge nudge. If I’m near home in North Van I’m hitting The Gull. They have what might just be the best burger in Vancouver right now — get the “Animal-style”. They also have a great happy hour with an awesome beer list.

What’s for dinner?

I’m still a sucker for those Sweetbreads at L’Abattoir, and anything else Lee Cooper and crew are doing (and no, I’m not drinking an Avocado Gimlet, ha ha). I always loved Cinara, and Autostrada is keeping the dream alive. Order whatever is seasonal and on special, and anything with anchovies.

What’s for dessert?

Not a dessert guy whatsoever, but I will gladly head over to Juice Bar for a glass of something nerdy. I love their rotating selection of natural wines and the food is always interesting and cool. It reminds me of Bar Brutal in Barcelona. Make sure you go the next time you’re in Spain!

Where are you taking us for late night cocktails?

Tocador. The only place where I feel like it’s OK to order a Mojito, and it’s fucking delicious! Plus they have a cool, late night atmosphere. Chef Justin Ell is now in the kitchen and he is cooking some of the most exciting food in Vancouver (I’m a huge fanboy of his Instagram). AJ’s Pizzeria is also great for late night fun — great pizza and AJ is a saint. On the way home, Trans Am is always rad for a beer, sitting at that bar is always a show.
